Korean BBQ Skewers
INGREDIENTS
Protein:
1 lbs Chicken thighs or Short Ribs Beef
2 Tbsp Rice Vinegar
1 tsp Black Pepper
1 tsp Sesame Oil
4 Green Onions
As needed Cooking spray
Sweet and Spicy Korean BBQ Glaze:
2 tsp Sesame Oil
6 Cloves Garlic, grated or finely minced
½ in cube Fresh Ginger, grated 
3 Tbsp Soy sauce
2 Tbsp Gojuchang
2 Tbsp Honey 
2 Tbsp Brown Sugar
NEXT LEVEL TIP:
If you want to step up the Beef, use a rib eye or ask your butcher for something with great marbling that you can cube easily. Whenever possible go to a butcher, the items in the case will be much fresher and they will have great tips on quality of cuts of meat!
DIRECTIONS
- If using wooden skewers, be sure to soak them in water for at least 30 min before cooking, this will help prevent them from catching on fire. 
- Cut Meat into bite size pieces , and place in a bowl and combine with Rice vinegar. Black Pepper, 1 tsp Sesame Oil. Set aside covered until ready to be skewered. 
- Cut green onions into 8ths and set aside. 
- In a small saucepan, heat Sesame oil on medium high heat. 
- Once oil is hot, add garlic and ginger, stir constantly and cook for 2 min, 
- Add the rest of the ingredients stirring until everything is fully incorporated. 
- Bring sauce to a boil, stirring occasionally, reduce to a simmer and let cook about 3 min. 
- Keep sauce warm, so that it will be easier to glaze the skewers. 
- Turn grill on high heat. 
- Skewer the meat and the green onions, alternating the green onions and meat. 
- Spray grill with cooking spray and place skewers on grill, cook about 3-4 min, then flip. 
- Once flipped brush skewer with Sweet and Spicy Korean BBq Glaze, coating the side evenly. Cook an additional 3-4 min. 
- Flip skewer and glaze again, cook an additional 2-3 min, or until chicken is cooked to an internal temperature of 165 degrees fahrenheit, and the beef is cooked to a minimum of 145 degrees fahrenheit. 
- Remove from grill and glaze one more time, let rest about 2 min, and enjoy!

These Skewers are delicious hot or cold, they are great when made ahead of time and brought to a party or great option to add to salad!
